I'm looking to soak a small engine block in the professional chem-dip, that is larger than the 5 gallon pail. Is a 7.5 gallon galvanized container suitable for this cleaner?

Yes, galvanized steel is a suitable storage material; just make sure that the container is sealable in order to avoid having evaporative losses.
